Andrea has been part of the culinary team of the hotel since the pre-opening, helping Vanitas write its story as a destination within Palazzo Versace Dubai.

Being the restaurant’s pillar since its debut on Dubai’s gastronomic scene, Andrea Gaia has built at Vanitas a community of friends and loyal guests, cultivating through them the love for the Italian traditional cuisine.

Originally from Rimini, on the East coast of Italy, Andrea first took an interest in becoming a chef at the age of 19 while in Canada. In 2004, he returned to his home country of Italy to train further with great Michelin masters.

Now having at least 17 years of experience under his belt, Andrea has travelled extensively across the globe including Australia and Canada. Before joining Palazzo Versace Dubai in June 2015, Chef Gaia has held positions at some of the most renowned Michelin Star rated hotels and restaurants in Europe. These include the Grand Hotel Villa Feltrinelli, Gargnano, Italy, which hold two Michelin Stars, and Pierre Gagnaire’s three Michelin Star restaurant in Paris, France.

Featuring refined and authentic flavours combined with the elegance of a world-class dining experience, the farewell dinner at Vanitas will include Andrea’s all-time favourite dishes, such as Burrata caseificio artigiana, Gnocchi di castagne e funghi or Agnello e Pepperoni.

The exquisite experience on April 12th lines up stunningly hand-crafted dishes to take the guests on a culinary journey through Italy. Tease your taste buds with Polipo e Patate, Tortelli di ricotta, and end the night with the signature dessert of the venue – Affogato.

The four-course tasting menu will have a wine-pairing option by Gaja, the famous Italian wine producer from the Piemonte region. Andrea Gaia, Chef de Cuisine at Vanitas, said: “I am so proud to have written a page in Palazzo Versace Dubai’s history.
